In Indonesia, vegetables are widely consumed in various types of cuisine. Vegetables are usually sautéed, cooked as soups, and also as salads. 1. Urap-urap
The first salad we cover is the urap-urap. The menaing of "urap" is mix. So the point is that we mix the vegetables with the dressing. 2. Karedok
Karedok comes from Sundanese. This salad uses raw vegetables and a peanut sauce dressing. The taste of the dressing is a mixture of sweet, spicy and the taste of various Indonesian spices. The key spices used are peanuts, chilies, kencur, palm sugar, shrimp paste, and lime. While the vegetables commonly used are cucumber, long beans, eggplant, and basil.
Karedok is usually eaten with white rice and side dishes such as fried chicken or fish. But of course you can eat it straight as a salad

3. Acar
Acar or pickles are one of the refreshing dishes that is often eaten in Indonesia. The most commonly used vegetables are carrots and cucumbers which are cut into small pieces, often also added with young cauliflower. Indonesians do not eat pickles as a separate dish, but as a side dish for various dishes. Pickles are usually served with fried rice, fried noodles, satay or curry. Pickles go well with this dish because they can balance the oily taste.
The dressing is also very easy to make, you only need sliced shalot, vinegar, water, salt and sugar.

4. Lalapan Sambel Terasi
Lalapan sambal terasi is a food that is very often consumed, especially in East Java. Lalapan means various vegetables eaten with sambal. Vegetables can be raw or cooked, either boiled or fried. Vegetables that can be used as fresh vegetables are also very diverse according to individual tastes. The most commonly used is raw cucumber, cabbage, long beans, eggplant, and chayote.
The dressing used is chili paste, usually not mixed directly with the vegetables, but is eaten by dipping the vegetables into the chili sauce. Sambal tersai is made by grinding shalot, garlic, chilies, tomatoes, shrimp paste, and a little sugar and salt.
